The waffle to end all waffle cravings.


We switched to the Keto Diet a while ago, and as an avid lover of all things carb, it was hard. Real hard. Enter the search for some form of bread substitute that wasn't dry and heavy, but light and fluffy and sweet. Enter the waffle. The following recipe was adapted from the Crispy Cinnamon Keto Waffle Recipe on The Kitchen Magpie.

This recipe is our go to, number one breakfast on the weekends. I sometimes I make a double or triple batch to heat and eat during the week too.

Honestly I think I could probably live off them.

Now, I'm not going to lie and say that they're exactly like a regular white flour waffle, they aren't. But they are the next best thing. Sweet, fluffy and ever so slightly crisp on the outside. I eat mine topped with Keto whipped cream, and D likes his with Sugar Free Syrup (get yours here) and butter. Either way, they're excellent!

Prep Time 20 min, Cook Time 3 min, Serves 4

Breakfast Keto Low Carb Gluten Free

Dry Ingredients

1 cup super fine almond flour (We use Anthony's)

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 tsp baking powder

1/4 teaspoon ground cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

2 tsp preferred sweetener (We use Whole Earth Sweetener)

Wet Ingredients

4 eggs divided

2 teaspoon vanilla extract

2 tbsp almond milk or desired dairy/dairy substitute (Hey, you do you.)

5 tbsp butter, melted

1 pint blueberries

1. Whisk together all dry ingredients in a medium bowl and set aside.

2. Divide the eggs. Place yokes in one bowl and whites in another.

3. Combine egg yokes, vanilla, milk and butter.

4. *Mix the yoke mixture into your dry mix and let sit for 10 minutes.

5. Beat egg whites until stiff peaks form.

6. Fold egg whites into batter

7. Add blueberries and mix till just combined.

Spoon batter into heated waffle iron and cook till golden brown, aprox 3 minutes.

Serve and enjoy!

*Part of the trick to this recipe is in the timing, A lot of almond flour baked goods tend to turn out dry. Be sure to let the batter sit for a full ten minutes before adding in the egg whites. This gives the batter time for the liquid to soak in and moisten your flour!
